The Workplace Relations Commission found four working-time complaints by former Maldron Hotel Tallaght head chef Darren Carter against TULANE BUSINESS MANAGEMENT LIMITED T/A Dalata Hotel Group not well founded. The decision was dated 3 June 2026. Carter said he worked exceptionally long shifts during two weeks in October and November 2024, including starts at 5am and finishes around 10.30pm or 11pm. The WRC found no evidence of a breach of the 48-hour average weekly limit over the relevant reference period. It also rejected his daily-rest complaint because the security-industry Employment Regulation Order he relied on did not cover his role as a hotel head chef. The other two complaints concerned breaks and extra hours connected with a van rental. The WRC found Carter’s head-chef role was outside the scope of the road-transport regulations cited in those claims; Carter had also conceded that point. All four complaints were found not well founded.
